Gluten Free in South Norwalk

Strada 18 offers gluten free Italian staples

When you think Italian, gluten free isn't the first thing that comes to mind. 

But Strada 18 in South Norwalk is changing that.

"The thing was, the public was really starting to demand it,"said Chef David Raymer, chef and partner at Strada 18 on 122 Washington Street in Norwalk.

Chef David Raymer spent a over 6 months, creating the doughs for the restaurant's gluten free pasta and pizza dishes.

"Experimentation. That is what took a while because to be honest, when I started to work on gluten free, I didn't like anything. I didn't like anything that I made. People would go, that's good, but it was never good enough as far as I was concerned. I wanted to come out with something that people, gluten free or not would think it was excellent either way," said Raymer.

For the last year, gluten free favorites like vegetable pasta have been on the menu.

"We've always been a place where people who highly allergic to things could come here and at least we know what is in everything; because we make it," added Raymer.
